Zucchini Pizza Bites [Low Carb and Gluten Free]
When I was in my corporate job, I often had to attend corporate functions. At these events the food tables were normally laden with unhealthy high carb snacks.
Little pizzas, pies, sausage rolls, little sandwiches and some sweet scones and little cakes and tarts.
Years back, I knew these snacks weren’t really healthy, but I didn’t know just how unhealthy they were.
The worst events were the training ones. We would be in lectures all day or all morning and the snacks would all be high carb.
How are you supposed to concentrate on what the lecturer is saying after eating these energy draining foods?
I still occasionally go to training events and there almost never is anything low carb and high fat to eat.
I usually plan to fast when I go to seminars, but I also carry some butter and nuts or some other on the go snacks with me.
When it comes to family functions, I have the same problem, but at least I can take healthy snacks along and at the same time introduce my non keto friends and family to healthy tasty snacks.

Variations and Ideas
If you want to increase the fat grams, add an olive to each bite. It will add an extra gram of fat per bite.
I like to use cremini or white button mushrooms, but you can use any type. The net carb count for the different mushrooms are very similar.
If you keep your net carbs very low and each carb is important to you, you may want to use green peppers rather than red ones.
Their sugar and carb count is slightly lower. For most of us, this difference is too tiny to really matter.
Carefully check the ingredients when you buy pepperoni. You don’t want any added gluten, sugar or grains.
Worried that the zucchini will be soggy?
They shouldn't be, but if it has released a lot of water during baking, place it on absorbent paper towel for a minute or so before serving.
Also:
Pat away any water or moistness from your zucchini slices, before you add them to the muffin pan.
I pat them dry them absorbent paper. You can also sprinkle a little salt and then wipe away any water drawn out by the salt.
Another option is to add the zucchini to the muffin pans and grill them in your oven for a few minutes, before you add the other ingredients.
This way will "crisp" from both the top and the bottom. Just be careful not to overcook them.
Layer the pizza ingredients in the muffin pans.
Start with the zucchini, add a little Mozzarella, then a pepperoni slice followed by the pizza sauce, another pepperoni slice and the rest of the cheese.
