Keto Biscotti with Almond Flour

Keto biscotti cookies can be made with almond flour, coconut flower or a mix of flours.
Traditionally this Italian goodness is made from wheat flour, sugar, eggs, cranberries and nuts like almond, pistachio and pine nuts.

If thinly sliced, you'll get about 32 biscottis. If you cut them thicker, you are likely to get about 16 keto biscotti biscuits.
Observations
I like to use parchment paper for most of the stuff I bake in the oven, but I have started using a silicone baking mat and find that it works very well.
I am not sure why we always add salt into sweet recipes, but I suppose we just do. 🙂

Usually I use unsalted butter and add a pinch of salt, but if I only have salted butter I use that and then I don't add more salt.
If you want these biscottis to be lower in net carbs, leave out the cranberries. If you leave out the cranberries, consider adding a little bit more sugar. I know the cranberries are not sweetened, but I find they do add a little sweetness to the cookies.
I like thin biscuits. If you like yours thin as well, then you want to shape your logs slightly bigger.
If you like biscotti biscuits narrower and thicker like in the video below then make your log flatter.
Always experiment! Your oven may be different, so you may need to bake the cookies a little shorter or longer.
You may like your biscuits less sweet, so reduce the sugar a bit. The dough taste test is however not the best indication about how sweet your cookies will be. I find that the dough tends to be a bit sweeter than the final cooked biscotti.
You can try different flavors. For instance you can replace the cinnamon with nutmeg.
As you know by now, I like my biscotti biscuits thinner, but you can also make them as thick as you like.
